I remembered Pancho's from my college days in Albuquerque, NM and how my wife and I would go there, primarily for the sopapillas. That was 35 years ago. I found out accidently that Pancho's was here in Phoenix and decided to try it for old times sake. Understand that I knew it wasn't real Mexican or New Mexican or even Tex-Mex. To start with, it wasn't clean. The tamales were dried out, the chile rellanos were soggy and didn't have much cheese. The enchiladas should have baked longer because the tortilla was still dry. The red chile stew was watery. To add the final indignity, when I got to my table, I was told the sopapilla machine was broken. Instead of those wonderful little pillows, I got stale chips and salsa right out of the can. Finally, putting it politely, my server was inattentive. A fond memory mangled.
